Grilled Vegan Pizza
So one of my favorite things in the whole wide world is grilled pizza. I actually no longer enjoy pizza from the oven due to this wonderful discovery. There is something so amazing about crust from the grill. It's crispy on the bottom and perfectly cooked on the top. Today, I decided I was going to make pizza and then it started raining. However my fiancé and daughter were waiting all day for me to grill pizza.
So we grabbed umbrellas, walked over to the grill and made our pizza. I'm glad their determination outweighed my desire to stay in the house. So below are the recipes for both pizzas I made.
Pizza Dough
1 packet of active dry yeast
2 1/4 cups of organic unbleached flour
2 teaspoons of garlic salt
3 tablespoons of olive oil (to add some extra flavor try using garlic and truffle infused olive oil)
2/3 cups of warm water
Mix all of these ingredients together in a mixer for about 1 minute. You may have to add a little more flour if the dough is sticky, or more water if it is too stiff. I suggest only adding a teaspoon of water at a time. Place flour on the table and use a rolling pan to form your pizza. Repeat this recipe for a second pizza.
BBQ Pizza toppings (this is what you will place on the dough)
Trader Joe's bbq sauce (this will replace the pizza sauce) so you will need to cover the pizza.
Beyond Meat Chicken strips (cook them in a skillet before placing on pizza)
Chopped red onion
Sliced tomatoes
Chopped mushroom
Chopped spinach
Chopped basil
Chopped green onions
Chopped garlic
Drizzle a little bbq sauce on top of the pizza and a little bit of truffle oil.
Sprinkle a little bit of vegan parmesan on top.
Basil Pesto Pizza Toppings
Trader Joe's Pesto and Quinoa spread (use this to replace pizza sauce)
Beyond Meat grilled chicken strips (I used one bag for both pizzas)
Sliced tomatoes
Chopped green onions
Sliced red onion
Chopped mushrooms
Chopped spinach
Chopped basil
Place all of the toppings on the pizza after you put the pesto down.
Sprinkle vegan parmesan on top.
Place the dough on nonstick foil, next you will top each pizza and then lift the foil onto a sturdy cookie dish to transfer to the grill. Place the foil on the grill on medium heat until the crust is crispy and the toppings are cooked.
I hope you enjoy this alternative to a cheesy pizza. It's a healthy alternative to a popular favorite.
