Vegan Gluten Free Oatmeal Banana Muffins.
One of the things I'm most passionate about is eating healthy and feeding healthy food to my family. Muffins are one of those things that people always assume are a healthy choice but usually aren't. The average muffin is full of unhealthy carbs, sugar and calories. My daughter is always asking me for pancakes and muffins, so I spend a lot of time remixing recipes. I want to allow her to enjoy her favorite foods, just in a healthy way that helps her growth.
We talk about food a lot in our home, I explain things to my daughter so she understands what she is eating. Today, on this sunday morning I made some delicious muffins that everyone enjoyed. The good thing about using natural fruits is that you won't need much sugar.
Ingredients:
3 ripe bananas
1 tbs of unsweetened almond milk.
1 tsp of ground cinnamon
1/4 cup of applesauce
6 tbs of vegan butter
1/4 cup of organic sugar
2 cups of ground oatmeal ( put 2 cups of uncooked old fashion oats and ground in mixer until it looks like flour)
1 tsp of baking soda
1 tsp of baking powder
1/2 tsp of salt
Instructions:
Mix the bananas, milk and cinnamon in one bowl. Then mix the sugar, butter and applesauce in another bowl. Mix the dry ingredients in the last bowl and then pour all of the ingredients in the bowl with dry ingredients. Lastly mix with your mixer until all ingredients are blended. You will have some little chunks from the oatmeal which is fine.
Pour the batter in unlined muffin tins using a 1/4 measuring cup. There will be enough for 12 muffins. Bake in a preheated oven on 325 for 20 minutes. After you take them out the oven, you can top them with blueberries or raspberries. You can also fold those fruits into the batter before you bake them.
Top with a little more vegan butter and enjoy!
